
This morning, after a walk around the park that’s a block and a half from our house, the Artist and I came home hungry. I wanted to make pancakes, but just wasn’t in the mood to deal with mixing and pouring and flipping. Then I remembered our puff pancake recipe. It’s easy, it’s quick and it’s good! This one is sure to be a hit in your house. It says serves six but this one feeds two of us!
Remember to use a pot holder when taking the hot skillet from the oven!
Gluten Free Puff Pancake
2 T butter
3 eggs
1/2 cup flour mix or gf flour
1/2 cup milk
1/4 teaspoon salt (I’ve never used salt, but the recipe calls for it)
Place butter in a 10-inch ovenproof skillet and place in a 400 degree oven for 3 – 5 minutes until butter melts (again, remember the potholder!). In a bowl, mix ggs with a rotary beater until combined. Add flour, milk and salt. Beat until smooth. Immediately pour the batter into the hot skillet. Bake about 25 minutes or until puffed and well browned.
We usually eat ours with melted butter poured over top and powdered sugar.

Hi Steve, We made your puff pancakes for breakfast again this morning. We have company for the weekend and the puff pancakes are the perfect breakfast food for entertaining. They are so quick to make, and I don’t have to stand at the stove for 30 minutes flipping pancakes. I served them with apple slices that I had sauteed in butter, sugar, cinnamon and ground ginger and everyone loved them.
