As I mentioned in a previous post, we’re updating our front sunporch. And we’re making some progress. While the contractor was here on Monday night, I was in the mood to bake some cookies, and decided I needed to still do a tribute to Bette Hageman’s passing. Bette was truly a leader in helping so many of us in gf cooking and baking.
Using some of her Featherlight Flour Mix, I decided to try Gluten Free Toll House Cookies. Only substitution I made was using the flour mix instead of ”regular” flour. Nothing else. I made bar cookies (as I’ve always loved those) and at one point of the baking stage, I thought this is never going to work. As I checked on it once in the oven, it was quite gelatinous, but it firmed up and baked well. Rich, buttery dough with chocolate morsels inside. Yum. I posted a picture of one below.
I knew our contractor wanted one, but I don’t share my gf yummies with just anyone. As for our sunporch, the inside is still unfinished, but I think the outside looks much better, don’t you? Take the eye test and decide for yourself.

Arfi – I used the regular Toll House Cookie recipe with Bette Hageman’s Featherlight Flour Mix for the flour. The mix is
1 c. rice flour
1 c. corn starch
1 c. tapioca starch
1 Tbs. potato FLOUR (not potato starch)
