At our house, we always tend to bake something yummy and sweet the morning of a holiday. And yesterday was no exception. We had two Fuji apples in the fridge and an apple coffee cake sounded really good. It was a cold morning, and what better way to wake up then smelling the sweet scent of apples baking in the oven, and the kitchen warming up.
This cake is easy, quick, and won’t disappoint. It’s sure to become a regular at our house on chilly winter mornings. Enjoy!
Apple Coffee Cake
Dry ingredients
1 cup flour mix (I used Featherlight)
1/2 cup sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. xantham gum
1 Tb. butter
Wet ingredients
2 eggs
1/2 cup milk
1 tsp. vanilla
2 cups peeled, chopped apples (I used Fuji, but any tart apple would be good)
Topping
3 T melted butter
1 1/2 T flour (do not include with the cup of flour above)
6 T brown sugar
Preheat oven to 350, and grease a 9 x9 pan
Mix the dry ingredients together, cutting in butter. Keep in mind with only 1T of butter, it won’t take much to cut that in.
Mix the eggs, milk and vanilla together, and gently blend in apples. Pour into flour mixture and gently stir until combined. Pour into greased 9 x 9 pan.
Mix the topping ingredients together and sprinkle over cake batter.
Bake for 25 -30 minutes (just watch the cake around 25 minutes, to see if it’s firmed up). It will be golden brown when it’s done.
Top with powdered sugar or do what we did – slather it with more butter and enjoy!
