I’ve been craving some good old-fashioned yeasty doughy rolls lately, so tonight I decided it’s time to make some. They turned out really well, and I will definitely make them again. Here’s the very easy recipe.
1 1/4 cups water – 110 – 115 degrees
3 large eggs, slightly beaten
3 T vegetable oil
3 T honey
2 1/4 tsp yeast
3 cups flour blend (I used 1 cup of Featherlight, and 2 cups of Carol Fenster blend
1 T xantham gum
1 tsp salt
Heat water to 110º to 115ºF and pour into mixing bowl. Add yeast and allow to foam for about 5 minutes. Add eggs, oil and honey to water and yeast.Thoroughly blend dry ingredients (except yeast) in a bowl (I used the bowl on our stand up mixer, and just combined with a whisk). With the mixer on a low speed, gradually add to liquid ingredients until all dry ingredients are well blended. Beat on medium speed about 5 minutes.Spoon batter into greased bread muffin cups or small loave pans; allow to rise approximately 30 minutes. Brush lightly with egg wash (they will be very delicate, so be careful!). Bake at 375ºF for 15 minutes; until tops are golden brown.






How similar to the old fashioned yeast rolls did these taste? I have had such a hard time finding a recipe to replace those type of rolls. My nephew loves yeast rolls. I had Thanksgiving and I made some rolls, but I noticed a lot of them left on plates and not eaten! They just didn’t have the right flavor or texture. At Christmas I gave up and just made Chebe.
