We had some blackberries in the fridge that we bought at Costco a few weeks ago. They looked good in the store but when I got them home and tried them, they weren’t that ripe yet. So they sat in the fridge. And sat. And sat. For longer then I should have left them. But today, in cleaning out the fridge I decided I needed to try them again or throw them away.
So I tried them. And they ripened a lot in the fridge, and had a much sweeter taste. So I decided to boil them down to make a simple syrup for drinks.
Blackberry Simple Syrup
1 1/2 cups water
1 cup sugar (I used Splenda)
2 cups blackberries (any berry will do)
Bring the water and sugar to a boil and boil for one minute. Add the berries and bring to a boil. Mash the berries as it boils and let cook/boil for 2 minutes.
Strain through a mesh sieve to get rid of the mash/seeds.
Makes 1 1/2 cups.
Use for martinis, italian sodas, or mix with ginger ale.






Or put on pancakes! Yum.
Yum! I always used to say that I didn’t like blackberries…until I tried FRESH blackberries. It makes all the difference in the world! I’m going to second Cassandra’s idea- blackberries and pancakes- it’s a match made in heaven!
