GF Newbie?

I’ve been there. Many of us have. Newly diagnosed and told you can’t eat gluten again. Many thoughts go through your mind. You think, “How can I possibly live gluten-free?” “What does this really mean?” It’s a time for frustration, anger, doubts and many more emotions. And it’s alright to have those emotions.
For me, one of the biggest frustrations was (and still is) is people commenting “You can have ”x” every once in a while” (”x” being gluten-filled object) or “You can cheat once in a while, right?” The answer is a big fat screaming “NO!” What many people don’t realize is, gluten is poison to us. And you know what, that’s ok! We’ve been fortunate to realize that we know now why we’ve been feeling like crap for however long. And best of all, we can control it now! So tell those people that just don’t get it that they wouldn’t eat rat poison, and basically, that’s what gluten is to us.
And if you think, “I can never eat out again!”, that’s not true. I’ve dined out successfully quite often, and often had better service and food after working with the chef, manager and server. Remember to thank them for a job well done. I’ve even sent some chefs and managers thank you cards after - it’s important to let them know we appreciate what they’ve done. And that will help you and others in the future for gf dining.
I’ve thought about sharing the best ideas for tips and lessons learned that I can share with my readers about being newly diagnosed as Celiac or having to go gluten free. While I have many tips/suggestions, I have to commend Lucy for putting together what I think is a great list.
So welcome aboard to gluten free living. It’s a heck of a ride and you’ll be glad you got on board.

Here are the two main flour mixes I use for baking:
It’s a good idea to add 1 T xantham gum about every 3 cups of flour unless the recipe has it included
Featherlight
1 cup white rice flour (NOT Sweet Rice)
1 cup tapioca flour
1 cup corn starch
1 Tablespoon potato flour (NOT potato starch)
Combine all thoroughly and store in a dark, dry place.
Carol Fenster blend
1 1/2 cups sorghum
1 1/2 cups potato starch (NOT FLOUR!) or cornstarch (I use corn starch)
1 cup tapioca flour.
Combine all thoroughly and store in a dark, dry place.
Wow - I can not belive I found someone in Denver….I just got diagnosed 2 weeks ago…I live in Littleton. Found Deby’s Gluten Free Bakery, but I really need help with where to find other restaraunts where I can eat….getting kind of worried i can never eat out again!

Hey, thanks for posting this! I like to hear what other people have gone through and what they have learned about living life gluten-free. I found out about my gluten intolerance about 3 months ago.
By the way, I love Deby’s! I have only eaten there once, but it made me so happy just to be able to eat a waffle.
Hey there! Im so glad i found this blog! I’ll tell u what, it’s been nine months for me and i was doing so well, but the last week has just kicked my butt with mistakes and cross contamination! And u are right, people just dont get it. I do filter out the comments but when u are sick and people are constantly saying “isnt there anything u can take” “maybe u just have a bug” cant u just go to the doctor”! i have heard them all this past week and it is driving me crazy! And u are so right! Gluten is poison!

I just learned that i am allergic to all gluten. Im pretty excited to feel good for the first time in i dont know how long.. what does it feel like?
Hi Dan - Welcome, and as odd as it sounds, congrats on being diagnosed. Now you know what’s been going on and you’ll feel better.
For me, it’s been great. I am nowhere near as tired as I used to be, I gained some weight which I needed, and no more dark circles under my eyes. I actually look healthy rather then sickly.

My mom lives in Naperville, Illinois and is relatively newly diagnosed with celiac and I’m trying to find new places to take her to eat. We already go to Red Robin, Jimmy Johns (their Unwich), Wildfire in Oakbrook and have heard that Texas Roadhouse has a gluten free menu. Anything we’re missing???
(Becky, I know that I am not Steve, but I saw your post and HAD to reply! I called the corporate office at Texas Roadhouse and asked about a gluten-free menu since I have seen several conflicting stories. The lady I talked to, her name started with a “D”, said that they didn’t have a gluten-free menu anymore. They pulled it, and have asked their locations to NOT serve Celiac’s because they are changing their recipes. I was very dissapointed because they gave me a gf menu at my local Texas Roadhouse, but I will not go back because I think maybe they didn’t get the memo or something. Hi Steve,I could just KISS YOU!!!!! Thank you so much! My husband was just diagnosed with CD about 2 months ago. We live in Pittsburgh, Bloomfield to be exact and it is known as “Little Italy”. Which means we have really good homeade breads, pasta and pizza here, all my husbands favorites. The first thing he said was I can’t have Sanchioli’s bread anymore, he was heart broken. We read your article and it was great when you said it was okay to have those emotions. Today we are going to Gluuteny a gluten free bakery in Pittsburgh and then to Whole foods which has a big selection of GF foods. Just had to say Thanks though!
I also live in Pittsburgh, Gluuteny is wonderful! Felt like a kid in a candy store! I have been eating GF for a few years now. Another great store is Good life Market they have a huge selection of GF food all in one area of the store - so easy to shop - and they are always friendly.
Also March 2008 there should be a Pizza Fusion opening in Richland area they will have GF pizza!
Thank you for having such a wonderful website. I am going to have steal some of your recipes. I have been so frustrated because I feel like I am not allowed to eat anything. My 2 year old son is allergic to wheat and milk. I am pregnant with out 2nd child and have started an allergen free diet (for them most part) for the next 9 months, 3rd trimester and through part of nursing. I can’t wait to see what you post next.

While I haven’t officially been diagnosed, my GI doc thinks that I have Celiac. Just started my first 6 weeks “try to see if this helps cure 8 months straight of diarrea.”
After 4 days, back to “normal” so there could be something to this….

Hi,
I have a daughter that is CD and we are having trouble with cross contamination. Did you know that tea bags with crimped edges (not stapled) have gluten in them (as the glue).
So my questions is - does anyone know the best way for cleaning up the kitchen after bread has been eaten? Is wiping down the counters with a sponge and soap and water enough? Do I need to bleach the counters? Does bleach do anything to gluten? How do I know I am not continuing to contaminate my dear daughter.

I was shocked to see tea bags contain gluten.
I was thrilled to find out I really had something the matter with me, and not just crazy. I haven’t felt good in years. My biggest complaint has just been tiredness and wanting to sleep constant.
@ times now I know I have ate gluten somewhere and just can’t figure out where.

I am new to the world of Gluten Free and Celiacs as I have a neice that has CD. I must admit that I had never heard of CD and didn’t know what Gluten was until she came into my life. After reading your rants and newbie sections I feel horrible, as I know I have said most of the rude and inconsiderate things you all have mentioned to her and her mother on more than one occasion. Thank you for opening my eyes and I will now be more cognizant of how my comments make them feel. I am just terrified of making her sick. My niece is one of the lucky ones however, her mother has just recently started her own gluten free bakery (Flying Whisk Bakery) here in Denver with what I must admit are some pretty darn tasty treats. Here’s to knowledge and not putting my foot in my mouth!
